- 1 lb chicken breast, diced
- 1 cup pineapple chunks
- 2 tablespoons chipotle sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Taco shells
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine diced chicken, pineapple chunks, chipotle sauce, olive oil, garlic powder, onion powder, cumin, salt, and pepper.
- Spread the mixture evenly on a sheet pan.
- Bake for 20-25 minutes or until the chicken is cooked through.
- Warm the taco shells in the oven for the last 5 minutes of cooking.
- Assemble the tacos by filling the shells with the chicken and pineapple mixture.
- Garnish with fresh cilantro and serve immediately.
Notes
- For extra heat, add more chipotle sauce.
