Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 1 cup red wine
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 2 carrots, sliced
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat and brown the chicken pieces on all sides.
  2. Transfer the browned chicken to the slow cooker.
  3. Add the chopped onion, garlic, mushrooms, carrots, red wine, chicken broth, tomato paste, thyme, bay leaf, salt, and pepper to the slow cooker.

  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
  6. Remove the bay leaf before serving.
