Description

A hearty and flavorful slow cooker minestrone soup that is perfect for a meatless meal.


Ingredients

Scale
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup small pasta (like ditalini)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a slow cooker, combine the onions, garlic, carrots, celery, zucchini, green beans, diced tomatoes, vegetable broth, kidney beans, basil, oregano, salt, and pepper.
  2. Stir well to combine all ingredients.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, add the pasta to the slow cooker and stir.
  5. Once the pasta is cooked, taste and adjust seasoning if necessary.
  6. Serve hot, garnished with fresh parsley.

Notes

  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Feel free to add any other vegetables you have on hand.
  • For a heartier soup, add more beans or pasta.
