- 1 cup fideo noodles
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the fideo noodles and cook until they are golden brown, stirring frequently.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Pour in the chicken broth and add the diced tomatoes, cumin, salt, and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 10 minutes.
- Serve hot, garnished with fresh cilantro.
Notes
- For a spicier version, add chopped jalapeños or chili powder.
- This soup can be made vegetarian by using vegetable broth instead of chicken broth.
