- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup diced tomatoes
- 1 cup bell peppers, diced
- 1 cup onion, diced
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tablespoon taco seasoning
- 1 cup salsa
- 1 cup cooked rice
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes, bell peppers, onion, taco seasoning, salsa, and cooked rice.
- Mix well until all ingredients are evenly combined.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Top with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
