- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced red bell pepper
- 1/2 cup diced green onions
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1 package egg roll wrappers
- Oil for frying
Instructions
- In a large bowl, combine black beans, corn, cheese, red bell pepper, green onions, cumin, chili powder, and garlic powder.
- Lay an egg roll wrapper on a clean surface and place 2-3 tablespoons of the filling in the center.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal.
- Heat oil in a deep pan over medium heat.
- Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove from oil and drain on paper towels.
- Serve warm with your favorite dipping sauce.
Notes
- For a healthier option, bake the egg rolls at 400°F for 15-20 minutes, flipping halfway through.
