Description

A vibrant and flavorful Southwestern Pasta Salad that combines fresh vegetables, pasta, and a zesty dressing for a perfect side dish or light meal.


Ingredients

  • 8 oz pasta (your choice)
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, canned or frozen
  • 1 cup black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cherry tomatoes, corn, black beans, red bell pepper, avocado, red onion, and cilantro.
  3. In a separate bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  4. Add the cooled pasta to the vegetable mixture and pour the dressing over the top.
  5. Toss everything together until well combined.
  6. Chill in the refrigerator for at least 30 minutes before serving.
