- 8 oz pasta (your choice)
- 1 cup cherry tomatoes, halved
- 1 cup corn, canned or frozen
- 1 cup black beans, rinsed and drained
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cherry tomatoes, corn, black beans, red bell pepper, avocado, red onion, and cilantro.
- In a separate bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
- Add the cooled pasta to the vegetable mixture and pour the dressing over the top.
- Toss everything together until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add grilled chicken or shrimp for extra protein.
- This salad can be made a day in advance for better flavor.
- Adjust the spice level by adding jalapeños or hot sauce if desired.
