Description
A delicious and healthy dish featuring roasted carrots tossed in a spicy maple glaze, served with crispy chickpeas and a creamy yogurt sauce.

- 1 lb carrots, peeled and cut into sticks
- 1 can chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 1 cup plain yogurt
- 1 tablespoon lemon juice
- Fresh parsley for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the carrots with olive oil, maple syrup, smoked paprika, cayenne pepper, salt, and pepper.
- Spread the carrots on a baking sheet and roast for 20-25 minutes until tender and caramelized.
- Meanwhile, toss the chickpeas with olive oil, salt, and pepper, and spread them on another baking sheet.
- Roast the chickpeas in the oven for 20-25 minutes until crispy.
- In a small bowl, mix the yogurt with lemon juice and a pinch of salt.
- Once the carrots and chickpeas are done, serve them together with a dollop of yogurt sauce on top and garnish with fresh parsley.
Notes
- Adjust the spice level by adding more or less cayenne pepper.
- For a vegan option, substitute yogurt with a plant-based yogurt.
- Leftovers can be stored in the refrigerator for up to 3 days.
