Description

A delicious and healthy dish featuring roasted carrots tossed in a spicy maple glaze, served with crispy chickpeas and a creamy yogurt sauce.


Ingredients

  • 1 lb carrots, peeled and cut into sticks
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 cup plain yogurt
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the carrots with olive oil, maple syrup, smoked paprika, cayenne pepper, salt, and pepper.
  3. Spread the carrots on a baking sheet and roast for 20-25 minutes until tender and caramelized.
  4. Meanwhile, toss the chickpeas with olive oil, salt, and pepper, and spread them on another baking sheet.
  5. Roast the chickpeas in the oven for 20-25 minutes until crispy.
  6. In a small bowl, mix the yogurt with lemon juice and a pinch of salt.
  7. Once the carrots and chickpeas are done, serve them together with a dollop of yogurt sauce on top and garnish with fresh parsley.

Notes

  • Adjust the spice level by adding more or less cayenne pepper.
  • For a vegan option, substitute yogurt with a plant-based yogurt.
  • Leftovers can be stored in the refrigerator for up to 3 days.
