Description

A flavorful and nutritious soup made with carrots, red lentils, and a spicy sesame kick.


Ingredients

Scale
  • 2 cups carrots, chopped
  • 1 cup red lentils
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 4 cups vegetable broth
  • 2 tablespoons sesame oil
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat sesame oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger; sauté until fragrant.
  3. Add chopped carrots and cook for a few minutes.
  4. Stir in red lentils and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer until lentils are tender.
  6. Add red pepper flakes, salt, and pepper; stir well.
  7. Blend the soup until smooth, if desired.
  8. Serve hot, garnished with fresh cilantro.

Notes

  • Adjust the spice level by adding more or less red pepper flakes.
  • This soup can be stored in the refrigerator for up to 5 days.
  • For a creamier texture, add coconut milk before blending.
