Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 tablespoon lemon juice

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, bring the vegetable broth to a boil and add the quinoa.
  3. Reduce heat, cover, and simmer for about 15 minutes or until the quinoa is fluffy.
  4. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  5. Add the sliced mushrooms and cook until they are tender.
  6. Stir in the fresh spinach and cook until wilted.
  7. Add the cooked quinoa to the skillet and mix well.
  8. Season with salt, pepper, thyme, and lemon juice.
