- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups fresh spinach
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 tablespoon lemon juice
Instructions
- Rinse the quinoa under cold water.
- In a saucepan, bring the vegetable broth to a boil and add the quinoa.
- Reduce heat, cover, and simmer for about 15 minutes or until the quinoa is fluffy.
- In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the sliced mushrooms and cook until they are tender.
- Stir in the fresh spinach and cook until wilted.
- Add the cooked quinoa to the skillet and mix well.
- Season with salt, pepper, thyme, and lemon juice.
- Serve warm and enjoy!
