Spinach Stuffed Chicken Breasts are a delicious and healthy dinner option, filled with nutritious spinach and creamy cheese.

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the chopped spinach, cream cheese, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper.
  3. Cut a pocket in each chicken breast and stuff with the spinach mixture.
  4. Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  5. Transfer the chicken to a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  6. Let rest for a few minutes before serving.

Notes

  • For added flavor, you can include sun-dried tomatoes in the stuffing.
  • Serve with a side of roasted vegetables or a fresh salad.
