Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1 cup fresh strawberries, pureed
  • ¼ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth.
  4. Add sour cream, eggs, strawberry puree, lemon juice, lemon zest, and vanilla extract. Mix until well combined.
  5. Pour the cheesecake mixture over the crust in the springform pan.
  6. Bake for 50-60 minutes or until the center is set.
  7. Let the cheesecake cool at room temperature, then refrigerate for at least 4 hours before serving.
