Deliciously soft and fluffy cinnamon roll muffins topped with a sweet glaze, perfect for breakfast or a sweet treat.

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1 cup powdered sugar
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix melted butter, milk, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. In a small bowl, mix brown sugar and cinnamon together.
  6. Fill each muffin cup halfway with batter, sprinkle with cinnamon sugar mixture, then top with remaining batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. While muffins are baking, prepare the glaze by mixing powdered sugar and milk until smooth.
  9. Once muffins are done, let them cool slightly before drizzling with glaze.

  • For extra flavor, add chopped nuts or raisins to the batter.
