- 2 large sweet potatoes
- 1/2 cup crumbled feta cheese
- 1/4 cup honey
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into 1/2 inch rounds.
- Toss the sweet potato rounds with olive oil, salt, and pepper.
- Arrange the rounds on a baking sheet and roast for 25-30 minutes until tender.
- Remove from the oven and drizzle with honey.
- Top with crumbled feta cheese and garnish with fresh parsley.
- Serve warm and enjoy!
Notes
- For a spicier kick, add a pinch of cayenne pepper to the sweet potatoes before roasting.
- These can be made ahead of time and reheated before serving.
