- 4 bell peppers
- 1 cup cooked chicken, shredded
- 1/2 cup pineapple chunks
- 1/4 cup teriyaki sauce
- 1/2 cup cooked rice
- 1/4 cup green onions, chopped
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix the shredded chicken, pineapple chunks, teriyaki sauce, cooked rice, and green onions.
- Stuff the mixture into the bell peppers.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 25-30 minutes, then remove the foil and add cheese if desired.
- Bake for an additional 5-10 minutes until the cheese is melted and bubbly.
- Serve warm and enjoy!

- Feel free to add other vegetables to the stuffing mixture.
