Ingredients

  • 1 can coconut milk
  • 200g firm tofu, cubed
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli)
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon ginger, minced
  • 1 teaspoon garlic, minced
  • Fresh basil leaves for garnish

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the minced garlic and ginger, sautéing until fragrant.
  3. Stir in the red curry paste and cook for another minute.
  4. Add the cubed tofu and mixed vegetables, stirring to coat with the curry paste.
  5. Pour in the coconut milk and soy sauce, bringing the mixture to a simmer.
  6. Cook for about 10-15 minutes, until the vegetables are tender.
  7. Serve hot, garnished with fresh basil leaves.
