A flavorful and unique twist on traditional Thanksgiving dressing, featuring Cajun spices and cornbread.

- 4 cups cornbread, crumbled
- 1 cup celery, diced
- 1 cup onion, diced
- 1 cup bell pepper, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 teaspoon thyme
- 1/2 teaspoon black pepper
- 2 eggs, beaten
- 1/4 cup parsley, chopped
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, sauté celery, onion, bell pepper, and garlic until softened.
- In a large bowl, combine the crumbled cornbread, sautéed vegetables, Cajun seasoning, thyme, black pepper, and parsley.
- In a separate bowl, whisk together the chicken broth and beaten eggs.
- Pour the broth mixture over the cornbread mixture and stir until well combined.
- Transfer the mixture to a greased baking dish.
- Bake for 30-35 minutes, or until the top is golden brown.
Notes
- For a spicier version, add diced jalapeños.
- Can be made a day ahead and reheated before serving.
- Adjust the Cajun seasoning to taste.
