- 12 corn tortillas
- 2 cups cooked shredded chicken
- 1 cup sour cream
- 1 cup green salsa
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup chopped onion
- 2 tablespoons vegetable oil
- Salt to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the vegetable oil over medium heat.
- Lightly fry each tortilla for about 10 seconds on each side until soft.
- In a bowl, mix the shredded chicken with half of the green salsa and chopped onion.
- Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in a baking dish.
- In a separate bowl, combine the remaining green salsa and sour cream, then pour this mixture over the rolled tortillas.
- Sprinkle the shredded cheese on top.
- Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
- Serve hot, garnished with additional sour cream and chopped cilantro if desired.
