These vegan pumpkin cookies are the perfect treat for Halloween, combining the flavors of pumpkin and spices for a delightful dessert.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup coconut oil, melted
  • 1 cup brown sugar
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup vegan chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree, melted coconut oil, brown sugar, almond milk, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the vegan chocolate chips if using.
  5. Drop spoonfuls of dough onto a lined baking sheet, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes or until the edges are lightly golden.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
