Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 cup water
  • 1 cup shredded cheese (optional)
  • 1 avocado, diced (optional)
  • 1/2 cup sour cream (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked.
  2. Add the chopped onion and cook until softened.
  3. Stir in the taco seasoning and cook for an additional minute.
  4. Add the black beans, kidney beans, corn, diced tomatoes, beef broth, and water to the pot.
  5. Bring the mixture to a boil, then reduce heat and let simmer for 20-30 minutes.
  6. Serve hot, topped with cheese, avocado, sour cream, and cilantro if desired.
