Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries, chopped
  • 1/2 cup white chocolate chips
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for frosting)
  • 1/4 cup dried cranberries, for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, mix together flour, baking powder, and salt.
  3. In another bowl, cream together the butter and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the chopped cranberries and white chocolate chips.
  7. Spread the batter evenly in the prepared baking pan.
  8. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. While the bars are baking, prepare the frosting by mixing cream cheese, powdered sugar, and vanilla extract until smooth.
  10. Once the bars are cooled, spread the cream cheese frosting on top and sprinkle with additional cranberries.
  11. Cut into squares and serve.
