- 14 oz firm tofu, cubed
- 2 cups bell peppers, sliced (red, yellow, green)
- 1 cup broccoli florets
- 1 cup snap peas
- 1 medium carrot, julienned
- 3 cloves garlic, minced
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- Salt and pepper to taste
- Sesame seeds for garnish
Instructions
- Press the tofu to remove excess moisture, then cut it into cubes.
- Heat olive oil in a large skillet over medium heat.
- Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes.
- Remove the tofu from the skillet and set aside.
- In the same skillet, add sesame oil and garlic, sauté for 1 minute.
- Add the bell peppers, broccoli, snap peas, and carrot. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
- Return the tofu to the skillet and add soy sauce. Stir well to combine.
- Season with salt and pepper to taste.
- Serve hot, garnished with sesame seeds.
Notes
- Feel free to use any vegetables you have on hand.
- For extra flavor, add ginger or chili flakes.
- This dish can be served over rice or quinoa for a complete meal.
