Description

A delicious and fresh tomato soup made with ripe tomatoes, perfect for a comforting meal.


Ingredients

  • Fresh tomatoes – 2 pounds
  • Onion – 1 medium, chopped
  • Garlic – 3 cloves, minced
  • Vegetable broth – 4 cups
  • Olive oil – 2 tablespoons
  • Salt – to taste
  • Pepper – to taste
  • Fresh basil – for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Chop the fresh tomatoes and add them to the pot.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and let it simmer for 20-30 minutes.
  6. Blend the soup until smooth using an immersion blender.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh basil.
