Description

A hearty and flavorful beef stew made with Guinness beer, perfect for St. Patrick’s Day celebrations.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 bottle (12 oz) Guinness beer
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 cups potatoes, diced
  • 1 cup frozen peas

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the beef cubes and brown on all sides.
  2. Add the chopped onion, carrots, celery, and garlic. Cook until the vegetables are softened.
  3. Stir in the tomato paste, thyme, and bay leaves.
  4. Pour in the Guinness beer and beef broth. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 2-3 hours until the beef is tender.
  6. Add the diced potatoes and cook for an additional 30 minutes.
  7. Stir in the frozen peas and cook for another 5 minutes.
  8. Season with salt and pepper to taste before serving.

Notes

  • For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
  • Serve with crusty bread for a complete meal.
  • This stew can be made a day in advance and tastes even better the next day.
