Description
A hearty and flavorful beef stew made with Guinness beer, perfect for St. Patrick’s Day celebrations.
Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 bottle (12 oz) Guinness beer
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 2 cups potatoes, diced
- 1 cup frozen peas
Instructions
- In a large pot, heat olive oil over medium heat. Add the beef cubes and brown on all sides.
- Add the chopped onion, carrots, celery, and garlic. Cook until the vegetables are softened.
- Stir in the tomato paste, thyme, and bay leaves.
- Pour in the Guinness beer and beef broth. Bring to a boil.
- Reduce heat to low, cover, and simmer for 2-3 hours until the beef is tender.
- Add the diced potatoes and cook for an additional 30 minutes.
- Stir in the frozen peas and cook for another 5 minutes.
- Season with salt and pepper to taste before serving.
Notes
- For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
- Serve with crusty bread for a complete meal.
- This stew can be made a day in advance and tastes even better the next day.
