Delicious and soft red velvet whoopie pies filled with cream cheese frosting, perfect for Valentine’s Day.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, mix together oil, buttermilk, eggs, food coloring, and vanilla extract.
- Combine the wet and dry ingredients until just mixed.
- Drop tablespoon-sized amounts of batter onto the prepared baking sheets, spacing them apart.
- Bake for 10-12 minutes or until a toothpick comes out clean.
- Let the cookies cool completely on a wire rack.
- For the filling, beat together cream cheese, butter, powdered sugar, and vanilla extract until smooth.
- Spread the filling on the flat side of one cookie and sandwich it with another cookie.
- Repeat with remaining cookies and filling.
Notes
- Store whoopie pies in an airtight container in the refrigerator.
- These can be made a day in advance for better flavor.
- Feel free to add sprinkles for a festive touch.
