Description

Delicious and soft red velvet whoopie pies filled with cream cheese frosting, perfect for Valentine’s Day.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, mix together oil, buttermilk, eggs, food coloring, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed.
  5. Drop tablespoon-sized amounts of batter onto the prepared baking sheets, spacing them apart.
  6. Bake for 10-12 minutes or until a toothpick comes out clean.
  7. Let the cookies cool completely on a wire rack.
  8. For the filling, beat together cream cheese, butter, powdered sugar, and vanilla extract until smooth.
  9. Spread the filling on the flat side of one cookie and sandwich it with another cookie.
  10. Repeat with remaining cookies and filling.

  • Store whoopie pies in an airtight container in the refrigerator.
  • These can be made a day in advance for better flavor.
