Ingredients

  • 1 can chickpeas, drained and rinsed
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 2 cups spinach
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, sauté until onion is translucent.
  3. Add chickpeas, cumin, salt, and pepper, stir well.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and let simmer for 15 minutes.
  6. Add spinach and cook for an additional 5 minutes.
  7. Blend the soup until smooth, if desired, and serve hot.
