Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 4 medium potatoes, diced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and celery, and sauté until softened.
  3. Stir in the garlic and mushrooms, cooking until the mushrooms are tender.
  4. Add the vegetable broth, tomato paste, thyme, rosemary, and bay leaves.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add the diced potatoes and continue to simmer until the potatoes are tender.
  7. Season with salt and pepper to taste.
  8. Remove bay leaves before serving.

Notes

  • Feel free to add other vegetables like peas or green beans.
  • This stew can be made ahead of time and tastes even better the next day.
