Ingredients

- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 carrots, sliced
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups vegetable broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- 4 medium potatoes, diced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion, carrots, and celery, and sauté until softened.
- Stir in the garlic and mushrooms, cooking until the mushrooms are tender.
- Add the vegetable broth, tomato paste, thyme, rosemary, and bay leaves.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add the diced potatoes and continue to simmer until the potatoes are tender.
- Season with salt and pepper to taste.
- Remove bay leaves before serving.
Notes
- Feel free to add other vegetables like peas or green beans.
- This stew can be made ahead of time and tastes even better the next day.
- Serve with crusty bread for a complete meal.
