Description

Delicious and tangy vegan lemon bars that are gluten-free, perfect for a refreshing dessert.


Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon turmeric (for color)
  • 1/4 teaspoon salt
  • 1/4 cup cornstarch
  • 1/4 cup coconut milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a bowl, mix almond flour, melted coconut oil, and maple syrup until combined.
  3. Press the mixture into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, whisk together lemon juice, lemon zest, turmeric, salt, cornstarch, and coconut milk until smooth.
  5. Pour the lemon filling over the crust and spread evenly.
  6. Bake for 25-30 minutes or until the filling is set.
  7. Let cool completely before slicing into bars.
  8. Refrigerate for at least 1 hour before serving for best texture.
