Ingredients

  • 2 large potatoes
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 cup mushrooms, chopped
  • 1 cup cream cheese
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and grate the potatoes, then squeeze out excess moisture.
  3. Mix the grated potatoes with salt and pepper.
  4. Form the potato mixture into nests on a baking sheet.
  5. Bake the potato nests for 20-25 minutes until golden and crispy.
  6. In a skillet, sauté onions and garlic until translucent.
  7. Add mushrooms and mixed vegetables, cooking until tender.
