Ingredients

  • 1 cup quinoa
  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a pot, cook quinoa according to package instructions.
  3. Toss diced sweet potatoes with olive oil, cumin, salt, and pepper, then spread on a baking sheet.
  4. Roast sweet potatoes in the oven for 25-30 minutes until tender.
