- 4 medium sweet potatoes, peeled and cubed
- 1 cup walnuts, chopped
- 1/4 cup maple syrup
- 2 tablespoons olive oil
- 1 teaspoon cinnamon
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the cubed sweet potatoes, chopped walnuts, maple syrup, olive oil, cinnamon, salt, and pepper.
- Toss until the sweet potatoes are well coated.
- Spread the mixture evenly on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and golden brown, stirring halfway through.
- Remove from the oven and let cool slightly before serving.
Notes
- For added flavor, you can sprinkle some nutmeg or ginger.
