Ingredients

  • 1 medium head of cabbage, chopped
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, chopped
  • 4 cloves of garlic, minced
  • 6 cups of vegetable broth
  • 1 can of diced tomatoes (14.5 oz)
  • 1 teaspoon of thyme
  • 1 teaspoon of oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion, carrots, and celery until softened.
  2. Add the garlic and bell pepper, cooking for an additional 2 minutes.
  3. Stir in the chopped cabbage and cook for another 5 minutes.
  4. Pour in the vegetable broth and add the diced tomatoes.
  5. Season with thyme, oregano, salt, and pepper.
  6. Bring the soup to a boil, then reduce heat and let it simmer for 30 minutes.
  7. Adjust seasoning if necessary and serve hot.
