Description

A hearty and comforting white bean soup with crispy bacon, perfect for a cozy meal.


Ingredients

  • 1 pound white beans, soaked overnight
  • 4 slices of bacon, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the soaked beans.
  2. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
  3. Add the onion, carrots, and celery to the pot and sauté until softened.
  4. Stir in the garlic and cook for an additional minute.
  5. Add the beans, broth, thyme, bay leaf, and the reserved bacon to the pot.
  6. Bring to a boil, then reduce heat and simmer for about 1 hour or until beans are tender.
  7. Season with salt and pepper to taste.
  8. Remove the bay leaf before serving.

Notes

  • For a vegetarian version, omit the bacon and use vegetable broth.
  • This soup can be made ahead of time and freezes well.
