- 1 ham bone
- 4 cups chopped cabbage
- 2 cups cooked white beans
- 1 onion, diced
- 2 carrots, sliced
- 3 cloves garlic, minced
- 6 cups vegetable or chicken broth
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, carrots, and garlic until softened.
- Add the ham bone and broth, bringing to a boil.
- Stir in the chopped cabbage and thyme, then reduce heat to simmer.
- Cook for about 30 minutes, until the cabbage is tender.
- Remove the ham bone, shred any remaining meat, and return it to the pot.
- Add the cooked white beans and season with salt and pepper.
- Simmer for an additional 10 minutes before serving.
