Ingredients

  • 1 ham bone
  • 4 cups chopped cabbage
  • 2 cups cooked white beans
  • 1 onion, diced
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 6 cups vegetable or chicken broth
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion, carrots, and garlic until softened.
  2. Add the ham bone and broth, bringing to a boil.
  3. Stir in the chopped cabbage and thyme, then reduce heat to simmer.
  4. Cook for about 30 minutes, until the cabbage is tender.
  5. Remove the ham bone, shred any remaining meat, and return it to the pot.
  6. Add the cooked white beans and season with salt and pepper.
  7. Simmer for an additional 10 minutes before serving.
