Description

Zwolsche Stoof van Jonnie Boer is a hearty Dutch stew made with tender beef and a variety of vegetables, simmered in a rich broth and red wine.


Ingredients

  • 1 kg beef (cut into cubes)
  • 2 onions (finely chopped)
  • 3 cloves garlic (finely chopped)
  • 2 carrots (sliced)
  • 250 g mushrooms (quartered)
  • 500 ml beef broth
  • 250 ml red wine
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 sprig thyme
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onions and garlic, sauté until translucent.
  3. Add the beef cubes and brown on all sides.
  4. Stir in the carrots and mushrooms, cooking for a few minutes.
  5. Add the tomato paste, bay leaves, and thyme, mixing well.
  6. Pour in the beef broth and red wine, bringing to a boil.
  7. Reduce heat, cover, and let simmer for about 2 hours or until the beef is tender.
  8. Season with salt and pepper to taste before serving.
