- 1 kg beef (cut into cubes)
- 2 onions (finely chopped)
- 3 cloves garlic (finely chopped)
- 2 carrots (sliced)
- 250 g mushrooms (quartered)
- 500 ml beef broth
- 250 ml red wine
- 2 tablespoons tomato paste
- 2 bay leaves
- 1 sprig thyme
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onions and garlic, sauté until translucent.
- Add the beef cubes and brown on all sides.
- Stir in the carrots and mushrooms, cooking for a few minutes.
- Add the tomato paste, bay leaves, and thyme, mixing well.
- Pour in the beef broth and red wine, bringing to a boil.
- Reduce heat, cover, and let simmer for about 2 hours or until the beef is tender.
- Season with salt and pepper to taste before serving.

- Serve with crusty bread or mashed potatoes for a complete meal.
- This dish can be made a day in advance for better flavor.
