Ingredients

- 2 flour tortillas
- 1 cup shredded cheese (cheddar or your choice)
- 2 eggs
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- Salt and pepper to taste
Instructions
- In a bowl, whisk the eggs and season with salt and pepper.
- Heat a non-stick skillet over medium heat.
- Add the diced bell peppers and onions to the skillet and sauté for 1-2 minutes.
- Pour the whisked eggs into the skillet and scramble until cooked through.
- Place one tortilla in the skillet, sprinkle half of the cheese on top, add the scrambled eggs, and then top with the remaining cheese.
- Cover with the second tortilla and cook for 2-3 minutes until the bottom is golden brown.
- Flip the quesadilla carefully and cook for another 2-3 minutes until the other side is golden brown and the cheese is melted.
- Remove from heat, cut into wedges, and serve warm.
Notes
- Feel free to add other ingredients like cooked bacon, sausage, or spinach.
- Serve with salsa or avocado for extra flavor.
- These quesadillas can be made ahead and reheated for a quick breakfast.
