Description

A delicious and healthy meal featuring air-fried falafel served in a bowl with fresh vegetables and homemade tzatziki sauce, perfect for Earth Day.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup flour (or gluten-free alternative)
  • 1 tbsp olive oil
  • 1 cup cucumber, diced
  • 1 cup tomatoes, diced
  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced (for tzatziki)

Instructions

  1. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, and pepper. Pulse until combined but still chunky.
  2. Add flour and mix until a dough forms. If too wet, add more flour as needed.
  3. Form the mixture into small balls or patties.
  4. Preheat the air fryer to 375°F (190°C).
  5. Brush the falafel with olive oil and place in the air fryer basket in a single layer.
  6. Cook for 12-15 minutes, flipping halfway through, until golden brown.
  7. For the tzatziki, mix Greek yogurt, cucumber, lemon juice, garlic, and a pinch of salt in a bowl.
  8. Assemble the bowls with falafel, diced tomatoes, and tzatziki on top.

Notes

  • For a spicier kick, add cayenne pepper to the falafel mixture.
  • Serve with pita bread or over a bed of greens for a complete meal.
  • Store leftover falafel in an airtight container in the fridge for up to 3 days.
