Description
A delicious and healthy meal featuring air-fried falafel served in a bowl with fresh vegetables and homemade tzatziki sauce, perfect for Earth Day.

- 1 can chickpeas, drained and rinsed
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup flour (or gluten-free alternative)
- 1 tbsp olive oil
- 1 cup cucumber, diced
- 1 cup tomatoes, diced
- 1/2 cup Greek yogurt
- 1 tbsp lemon juice
- 1 clove garlic, minced (for tzatziki)
Instructions
- In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, and pepper. Pulse until combined but still chunky.
- Add flour and mix until a dough forms. If too wet, add more flour as needed.
- Form the mixture into small balls or patties.
- Preheat the air fryer to 375°F (190°C).
- Brush the falafel with olive oil and place in the air fryer basket in a single layer.
- Cook for 12-15 minutes, flipping halfway through, until golden brown.
- For the tzatziki, mix Greek yogurt, cucumber, lemon juice, garlic, and a pinch of salt in a bowl.
- Assemble the bowls with falafel, diced tomatoes, and tzatziki on top.
Notes
- For a spicier kick, add cayenne pepper to the falafel mixture.
- Serve with pita bread or over a bed of greens for a complete meal.
- Store leftover falafel in an airtight container in the fridge for up to 3 days.
