  • 1/4 cup rolled oats
  • 1/4 cup unsalted butter, softened (for crumb topping)
  • 1 teaspoon ground cinnamon (for crumb topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the melted butter, eggs, and milk.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fold in the diced apples gently.
  6. In a separate bowl, prepare the crumb topping by mixing brown sugar, flour, oats, softened butter, and cinnamon until crumbly.
  7. Fill the muffin cups with the batter and sprinkle the crumb topping over each muffin.
  8. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool before serving.
