- 2 large eggs

- 1/2 cup buttermilk
- 1 cup diced apples (peeled and cored)
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/4 cup brown sugar
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, and mix until just combined.
- Fold in the diced apples, cinnamon, and nutmeg.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Sprinkle brown sugar on top of each cupcake.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
Notes
- For extra flavor, consider adding chopped walnuts or pecans.
