Description

Avocado Corn Salsa with Charred Lime is a refreshing and zesty dip perfect for BBQs and gatherings.

Ingredients

Scale
  • 2 ripe avocados
  • 1 cup corn kernels (fresh or frozen)
  • 1 medium red onion, diced
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 1 lime, halved for charring
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Char the lime halves on the grill until grill marks appear, about 2-3 minutes.
  3. In a bowl, mash the avocados with lime juice, salt, and pepper.
  4. Add corn, red onion, jalapeño, and cilantro to the mashed avocado.
  5. Mix well to combine all ingredients.
  6. Serve with the charred lime on the side for extra flavor.

Notes

  • For a spicier dip, leave some seeds in the jalapeño.
  • This salsa can be made a few hours in advance; just add the avocado right before serving to prevent browning.
