Description

A delicious and protein-packed Bang Bang Chicken Bowl featuring tender chicken, fresh vegetables, and a creamy sauce.


Ingredients

  • 1 lb chicken breast, diced
  • 2 cups broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup cooked brown rice
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix mayonnaise, sweet chili sauce, sriracha, soy sauce, garlic powder, and ginger to create the sauce.
  2. In a skillet, cook the diced chicken over medium heat until fully cooked, about 5-7 minutes.
  3. Add broccoli and bell peppers to the skillet and cook until tender, about 3-4 minutes.
  4. Stir in the sauce and cook for an additional 2 minutes.
  5. Serve the chicken and vegetable mixture over cooked brown rice.
  6. Garnish with additional sriracha if desired.

Notes

  • For a spicier version, increase the amount of sriracha.
  • Can substitute chicken with tofu for a vegetarian option.
