Description

BBQ Jackfruit Sandwiches are a delicious vegan alternative to pulled pork, featuring tender jackfruit simmered in a flavorful BBQ sauce and served on a bun.


Ingredients

  • 2 cans young green jackfruit in water or brine, drained and rinsed
  • 1 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 burger buns
  • Coleslaw (optional, for topping)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add the drained jackfruit, smoked paprika, cumin, salt, and pepper. Stir to combine.
  5. Cook for about 10 minutes, stirring occasionally, until jackfruit is tender.
  6. Using a fork, shred the jackfruit into smaller pieces.
  7. Add BBQ sauce to the skillet and mix well. Cook for an additional 5 minutes.
  8. Toast the burger buns if desired.
  9. Assemble the sandwiches by placing the BBQ jackfruit on the buns and topping with coleslaw if using.
  10. Serve warm and enjoy!

Notes

  • Make sure to use young green jackfruit, not ripe jackfruit.
  • Feel free to adjust the BBQ sauce to your taste.
