BBQ Jackfruit Sandwiches are a delicious vegan alternative to pulled pork, featuring tender jackfruit simmered in a flavorful BBQ sauce and served on a bun.

- 2 cans young green jackfruit in water or brine, drained and rinsed
- 1 cup BBQ sauce
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 burger buns
- Coleslaw (optional, for topping)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and sauté until translucent.
- Add minced garlic and cook for another minute.
- Add the drained jackfruit, smoked paprika, cumin, salt, and pepper. Stir to combine.
- Cook for about 10 minutes, stirring occasionally, until jackfruit is tender.
- Using a fork, shred the jackfruit into smaller pieces.
- Add BBQ sauce to the skillet and mix well. Cook for an additional 5 minutes.
- Toast the burger buns if desired.
- Assemble the sandwiches by placing the BBQ jackfruit on the buns and topping with coleslaw if using.
- Serve warm and enjoy!
Notes
- Make sure to use young green jackfruit, not ripe jackfruit.
- Feel free to adjust the BBQ sauce to your taste.
- These sandwiches can be made ahead of time and reheated.
