Ingredients

  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions

  1. In a medium saucepan, combine the mixed berries and sugar over medium heat.
  2. Stir gently until the berries start to release their juices, about 5 minutes.
  3. Add the lemon juice and vanilla extract, stirring to combine.
  4. If you prefer a thicker compote, mix the cornstarch with a little water to create a slurry and add it to the saucepan.
  5. Continue to cook for another 2-3 minutes until the compote thickens slightly.
  6. Remove from heat and let it cool slightly before serving over pancakes or waffles.
