- 1 tablespoon cornstarch (optional, for thickening)
Instructions
- In a medium saucepan, combine the mixed berries and sugar over medium heat.
- Stir gently until the berries start to release their juices, about 5 minutes.
- Add the lemon juice and vanilla extract, stirring to combine.
- If you prefer a thicker compote, mix the cornstarch with a little water to create a slurry and add it to the saucepan.
- Continue to cook for another 2-3 minutes until the compote thickens slightly.
- Remove from heat and let it cool slightly before serving over pancakes or waffles.

- This compote can be stored in the refrigerator for up to a week.
