- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract (for whipped cream)
Instructions
- Preheat the oven to 350°F (175°C) and grease a sheet cake pan.
- In a large bowl, mix together flour, sugar, baking powder, and salt.
- Add softened butter, milk, eggs, and vanilla extract to the dry ingredients and mix until smooth.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely in the pan.
- In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Once the cake is cool, spread the whipped cream over the top and decorate with mixed berries.
- Slice and serve the cake chilled or at room temperature.
Notes
- For best results, use fresh berries.
- This cake can be made a day in advance and stored in the refrigerator.
