- 1 cup corn (fresh or frozen)
- 1/2 cup mayonnaise
- 1/2 cup cotija cheese, crumbled
- 1/4 cup cilantro, chopped
- 1 lime, juiced

- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper.
- Coat the chicken breasts with the mayonnaise mixture.
- Place the chicken in a baking dish and top with corn and cotija cheese.
- Bake for 25-30 minutes or until the chicken is cooked through.
