- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries
- 1 cup brown sugar
- 1 cup rolled oats
- ½ cup all-purpose flour
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In another bowl, beat cream cheese and granulated sugar until smooth.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- Pour the cream cheese mixture over the crust in the springform pan.
- In a separate bowl, combine blueberries, brown sugar, oats, flour, and cinnamon to make the crumble topping.
- Sprinkle the crumble mixture over the cheesecake layer.
- Bake for 50-60 minutes or until the center is set.
- Let it cool, then refrigerate for at least 4 hours before serving.
Notes
- For a richer flavor, use full-fat cream cheese.
- Feel free to substitute blueberries with other berries if desired.
- Serve with whipped cream for added indulgence.
