BLT Avocado Quesadillas are a delicious and crispy summer dish that combines the classic flavors of a BLT sandwich with creamy avocado and melted cheese, all wrapped in a golden tortilla.

- 4 large flour tortillas
- 1 cup shredded lettuce
- 1 large tomato, diced
- 1 avocado, sliced
- 1 cup cooked bacon, crumbled
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
Instructions
- Heat a skillet over medium heat and add olive oil.
- Place one tortilla in the skillet and layer half of the cheese on one half of the tortilla.
- Add the lettuce, tomato, avocado, and bacon on top of the cheese.
- Sprinkle the remaining cheese over the toppings and fold the tortilla in half.
- Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
- Remove from the skillet and cut into wedges. Serve warm.
Notes
- Feel free to add other ingredients like jalapeños or onions for extra flavor.
- These quesadillas can be made vegetarian by omitting the bacon.
- Serve with salsa or sour cream for dipping.
