- 2 pounds of baby potatoes
- 1 cup of cooked bacon, chopped
- 1 cup of cherry tomatoes, halved
- 1 cup of romaine lettuce, chopped
- 1 cup of ranch dressing
- 1/2 cup of green onions, sliced
- Salt and pepper to taste
Instructions
- Boil the baby potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
- Once cooled, cut the potatoes into quarters.
- In a large bowl, combine the potatoes, bacon, cherry tomatoes, romaine lettuce, and green onions.
- Add the ranch dressing and mix until everything is well coated.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
