Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, cream together the butter, cream cheese, and sugar until smooth.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the blueberries gently.
  7. Pour half of the batter into the prepared loaf pan.
  8. In a small bowl, mix together the brown sugar, oats, and nuts to create the streusel topping.
  9. Sprinkle half of the streusel mixture over the batter in the loaf pan.
  10. Pour the remaining batter on top and finish with the rest of the streusel mixture.
  11. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  12. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
