Description

Delicious blueberry muffins topped with a crunchy streusel for a perfect breakfast or snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 cup fresh blueberries
  • 1/4 cup brown sugar
  • 1/4 cup rolled oats
  • 1/4 cup cold butter, cubed
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, vegetable oil, and egg.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
  5. In a separate bowl, combine brown sugar, oats, cinnamon, and cubed butter to make the streusel topping.
  6. Fill each muffin cup with batter and sprinkle the streusel topping on each muffin.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.

Notes

  • For best results, use fresh blueberries.
  • These muffins can be stored in an airtight container for up to 3 days.
  • Feel free to substitute with frozen blueberries, but do not thaw them before adding to the batter.
